Chef Jennifer Bucko Lamplough is a Chef Instructor for the Robert Morris University Institute of Culinary
Arts in Chicago, Aurora and Orland Park, Illinois and is co-author with Lara Rondinelli, RD, LDN, CDE of two
American Diabetes Association Cookbooks: the award-winning, best-selling, Healthy Calendar Diabetic
Cooking and the Healthy Carb Diabetes Cookbook. (published under the name Chef Jennifer Bucko).
She also contributes recipes regularly to the American Diabetes Association's "Recipes for Healthy Living"
web site and e-newsletter. Chef Jen was recently featured on Food Network's newest program, "Fat Chef"
which chronicled the weight loss journeys of 12 chefs across the country. By participating in the program,
she lost over 50 pounds and is still working toward an overall goal of 100 pounds lost. Her participation
in the show has led her to launch FitFoodieChef, where she offers healthy cooking demonstrations and
classes, online tips, recipes and advice on healthy eating and living.
Chef Jen is a member of the prestigious Les Dames d'Escoffier organization (International and Chicago
Chapters), for which she is Chapter President for 2012-2014. Chef Jen sat on the 2010-2012 Chicago
Chapter Executive Board as Secretary and was co-chair of the 2010 Les Dames Chicago Fundraiser,
Fashion Plates, which raised over $30,000 for culinary scholarships for women culinary students as well
as for the organization's Green Tables Initiative.
Chef Jen has a Certificate in Professional Cooking from the Cooking and Hospitality Institute of Chicago,
a Le Cordon Bleu certified program, a Bachelor of Arts Degree in Journalism from Indiana University in
Bloomington, Indiana and a Masters of Business Administration degree from the Morris Graduate School
of Management in Chicago, Illinois.
Chef Jen has appeared as a guest chef on several television programs including WLS Channel 7 news,
WGN Channel 9 news, NBC 5 Chicago news, and Total Living with Jerry Rose on the Total Living Network.
She has also been a featured chef on several radio programs across the country, most notably the Living
Today program on Martha Stewart Living Radio. She has done cooking demonstrations across the United
States including the Taste of Chicago, the American Diabetes Association Expo, the International
Association of Culinary Professionals Annual Conference, the Midwest Literary Festival and the Chicago
Flower Garden Show.
